Blend of 1, 2, and 3 season coolship spontaneous ale. Barrel fermented and aged. Done using the same methods as traditional Belgian Lambic producers, including 100% spontaneous fermentation via coolship inoculation. Gueuze / lambic are terms that can only be applied to beers made in the Senne river valley in Belgium, so we add our own local twist to make this beer our own – 100% Colorado ingredients (on all batches made after Jan 1, 2017).
