Saintonge Merlet’s Cassis cream has had the status of Geographical Indication since 2015, recognition of the unique know-how implemented for 30 years for the cultivation of blackcurrants and their transformation into liqueur.The Charente region gives unique properties to the Noir de Bourgogne variety, already naturally rustic, by limiting its yields.Thus are harvested berries small, but very rich.They are then macerated in a fine alcohol to extract all their aromas, then pressed and filtered into a natural infusion of fruit.Finally, sugar is added to obtain the final crme de cassis.Total control of the culture and harvest of berries, their maturity, then their transformation by Merlet, combined with a high concentration of macerated fruits,
